Field mulch spread across acreage isn't a meaningful termite risk — the concern with mulch and termites is moisture held directly against a structure. Keep the mulch layer a couple of feet off your foundation and skirting, like you would any landscaping mulch, and the rest of the property's ground cover is doing good work, not harm.
